During my ICPD duration, I have remained involved in volunteering activities and worked as a Spanish Research Assistant in various research studies taking place at The University of Texas at Austin.

As the spanish-speaking class volunteer, I would introduce the weeks topic as well as work alongside Registered Dietitians to provide nutrition education to pre-diabetic participants in Spanish. Additionally, I aided in the creation of nutrition handouts tailored to the participants.

As a volunteer for the Institute for Collaborative Solutions in Food and Nutrition, I was able to create letters, presentations, and documentation to be sent to the board of UT Austin. I was also able to organize meetings with the administrative leaders of the university.

As a volunteer, I purchased and created "snack packs" for the homeless population in Austin. The snack packs included items such as: nuts, crackers, dried fruit, and vitamin C supplement packs. Click here for more information on volunteer coordinator and dates of service.
